Hello guys. I hope you are doing great and are excited to enter this holiday season. And what is the best way to start the darker season if not with some comfy recipes? Here I gathered 25 vegan winter recipes that I’ve been loving.
To be honest, I wasn’t super excited until last week about the holidays but now I am happy to celebrate all the holidays with my American family. We are going to make a vegan turkey from Trader Joe’s and I will probably bake a vegan apple pie. But can’t promise.
Currently, I am also a bit busy planning dishes for Christmas and New Year dinners. If you didn’t know, in Latvia and other post-Sovjet countries New Year is celebrated similarly to Christmas with food and we gift each other gifts on New Year’s night.
So it’s a busy and overwhelming season but also very exciting. And maybe, just maybe, you’ll find a good vegan recipe in this list to add to your dinner.

25 vegan winter recipes
Those are not my recipes, I or my husband found them online while looking for the best vegan winter recipes. These recipes have been collected for the past few years with exception of a few new ones that won me over very quickly.
Usually, my husband cooks our food. But recipes like vegan pilaf or mushroom recipes always remind me of home and my childhood. I cook them myself and try to get that authentic taste but without any animal-derived products.
So I hope, you will enjoy my little collection of these vegan recipes for winter and I hope to make more vegan recipe lists for different seasons soon.
1| Vegan Japanese curry (usually, we don’t add soy curls and mushrooms, but we do add celery and fried vegan chicken. It;s my huband’s grandma’s recipe and I absolutely love it)
2|Sweet potatoe and black bean chili (also, add impossible ground beef for extra flavor and texture)
3| Sheet pan oven roasted veggies
4| Curry butternut squash lentil soup
5| Vegan tomato soup + Vegan grilled cheese (you can skip pesto part, I’d recommend Violife mozzarella or cheddar cheese)
6| Chickpea stuffed sweet potato ( I love adding vegan sour cream)
7| Warm pasta salad with roasted veggies
10| Vegan Biryani
11| Vegan creamy musrooms (just add it to rice, potatoes, or pasta)
12| Vegan borscht (the recipe says vegetarian but it’s pretty much vegan, plus there are tips on how to make it vegan, as well)
13| Prasorizo Greek leek with rice (I want to say thank you to my friend Isis who introduced this recipe. I also usually don’t add dill but add nutritional yeast and vegan cream cheese)
14| Infamous TikTok vegan feta pasta (and again, I always add cream cheese and nutritional yeast)

16| Kale quinoa harvest bowl (this recipe does have blue cheese but it’s optional and if you remove or substitute it with vegan parmesan, it will be fully vegan)
17| Vegan cauliflower curry or use this recipe
18| Vegan spicy Thai peanut ramen
19| Vegan Russian mushroom stroganoff
21| Vegan stuffed shells or try this recipe
22| Vegan pilaf (the recipe suggests to use barberries, cumin and soy meat, however, my mom used raisins when I was growing up and you don’t have to add any vegan meat if you don’t want. I would also suggest serving it with parsley and vegan sour cream)
